Preparation time: 35 mins | Cooking time: 20 - 25 mins | Serves: 6 - 8 people
INGREDIENTS:
For the dough:
- 9 eggs
- 150 g of sugar
- 180 g of flour
- 1 tsp baking powder
- Butter for greasing
- Powdered sugar for sprinkling
- Tracing paper
For the cream:
- 75 g of sugar
- 1 Tbsp (tea) cornstarch flour
- 8 gems
- 70 ml of water
PREPARATION:
Line a tray with parchment paper and grease it with butter and set aside.
In a bowl, beat the eggs, gradually adding the sugar. Add the flour and yeast and beat some more.
Pour the dough onto the tray and bake for approximately 25 minutes.
Prepare the cream: in a pan, add the sugar, cornstarch, water, egg yolks, cinnamon and water and heat until it thickens, stirring constantly without letting it boil. Remove from heat and set aside.
Remove the pie from the oven and let it cool, spread with the egg cream, roll up and remove the paper. Sprinkle with powdered sugar and decorate with ground cinnamon and serve.
