INGREDIENTS:
- 1 puff pastry
- 500 g cooked and drained pumpkin
- 300 g of grated coconut
- 200 g of sugar
- 4 eggs
- juice of 1 orange
- coco ralado para polvilhar
PREPARATION:
Heat the oven to 180 degrees. Line a tart pan with the puff pastry and prick the bottom with a fork - this prevents the pastry from swelling during baking.
In a pan with water, cook the pumpkin. Once cooked, drain the water and grind everything until it becomes a smooth puree.
In a large bowl, mix the pumpkin, sugar, eggs, orange juice and grated coconut until you obtain a homogeneous and creamy mixture.
Pour this mixture into the tart pan and bake for around 40 minutes, or until the surface is golden brown and the dough is firm to the touch. Remove from the oven, let cool slightly and sprinkle with grated coconut before serving.
