INGREDIENTS:
- 4 handfuls of spinach leaves
- 300 g of broccoli
- 200 g sweet potato
- 1 medium potato
- 1 leek
- 1 onion
- 2 cloves of garlic
- 600 ml of water
- Salt and olive oil to taste
PREPARATION:
Peel and wash the sweet potato, potato, onion and garlic. Cut them into pieces.
Wash the broccoli, spinach leaves and leeks. Cut the broccoli into small pieces and the leek into slices. Reserve the spinach leaves.
In a pan with water, place the sweet potato, potato, broccoli, leek, onion and garlic.
Season with salt, stir and let cook for 25 minutes.
When there are 10 minutes left, add the spinach leaves.
At the end, blend the soup with a hand blender until it becomes a velvety cream.
Adjust the amount of water if necessary.
Serve hot with a drizzle of olive oil.
