INGREDIENTS:

  • 10 sardines
  • 500 g of potatoes
  • 3 cloves of garlic
  • 2 small onions
  • 1 tbsp (tea) pepper
  • 1 bay leaf
  • 1 tbsp (tea) sweet pepper
  • 1 tbsp (soup) vinegar
  • ½ green pepper
  • salt (q.b.)
  • parsley (q.b.)
  • 250 ml of olive oil.

PREPARATION:

Preheat the oven to 180ºC.

Wash the potatoes and place them on the stove in plenty of water. Season with half the salt and cook for 45 minutes. Drain the potatoes and let cool. Place the potatoes on an oven tray and sprinkle with the remaining salt. Bake for 20 minutes.

On a baking tray, drizzle with olive oil. Add the sardines and season on both sides with salt. Bake for 20 minutes. Halfway through, carefully turn the sardines over.

In a frying pan with olive oil, sauté the onions cut into half moons and the chopped garlic cloves. Add the bay leaf, green pepper strips and brown. Season with salt, pepper and paprika. Involve everything. Add chopped parsley and drizzle with vinegar. Let it braise for 5 minutes.

Lightly crush the potatoes with a spoon. Place the sardines and potatoes on a platter. Cover with the onion, drizzle with the sauce and serve.
