INGREDIENTS:
- 1 piece of soaked cod
- 400 g black-eyed peas
- 1/2 red pepper
- 1/2 green pepper
- 72 g sweet corn
- 1 bay leaf
- juice of 1 lemon
- 1 onion
- 4 cloves of garlic
- some parsley stalks
- olives
- good quality olive oil
- salt and pepper
PREPARATION:
Cook the cod fillet for just 5 minutes, drain, flake, removing skin and bones, set aside. In a pan with water seasoned with salt, cook the soaked black-eyed peas for around 30 minutes.
In a frying pan, add the olive oil with the half-moon onion, chopped garlic, diced green and red pepper, sweet corn and bay leaf, fry until the onion is soft, stirring constantly. Add the cod to the chips, the olives, mix and then add the drained cooked beans. Season with salt and pepper and mix well, leave to heat for 5 minutes.
Place on a platter, sprinkle with chopped parsley and sliced or sliced boiled eggs.
