In a frying pan with hot olive oil, sauté the sliced onion and crushed garlic cloves.

Add the cooked and shredded cod and straw potatoes and mix well. Let the potatoes soften a little.

In a bowl, lightly beat the eggs with a fork.

Add the eggs to the cod, mix everything and let the eggs cook. Add the chopped parsley. Season with salt and pepper. Involve everything.

Serve shaped with a rim. Place tomato slices and olives around it and sprinkle with parsley.
