INGREDIENTS:

  • 3 soaked cod fillets
  • 1kg small potatoes
  • 4 sliced garlic cloves
  • 4 cloves of garlic, chopped
  • 1 tbsp (tea) sweet pepper
  • 2 onions cut into half moons
  • 3 bay leaves
  • Salt (to taste)
  • Olive oil (to taste)
  • Pepper (to taste)
  • 400g of greens

PREPARATION:

For the punched potatoes: place the well-washed potatoes on an oven tray. Season with salt and drizzle with olive oil. Bake at 200ºC for 30 minutes.

For the cod: place the cod in a pan of boiling water and let it boil for around 5 minutes. Remove the cod and reserve the water. Let the cod cool and remove the bones and skin and flake it.

For the greens: cook the greens in previously heated cod water seasoned with a little salt. When they are soft, remove and rinse under cold water. Let the water drain well.

For the cornbread: cut the cornbread in half and remove the crust. Add the chopped garlic cloves, drizzle with olive oil, season with pepper and mix everything together.

Place a pan on the heat with a base of olive oil. When it is hot, add the onions cut into half moons and the chopped garlic cloves. Add the bay leaves and season with salt and paprika. Let it fry until the onion is soft. Remove the bay leaves and set aside.

Place the mashed potatoes on a tray, drizzle with olive oil, add the onion, add the greens, cod flakes and finally the cornbread.

Bake in a preheated oven at 200ºC, until golden. Serve immediately.
