Preparation time: 20 mins | Oven time: 40 mins | Serves: 6 people
INGREDIENTS:
- 1 rectangular puff pastry roll
- 5 egg yolks
- 180 g of sugar
- 60 g of wheat flour
- 480 ml of milk
- 2 teaspoons vanilla flavoring
- powdered sugar for sprinkling
PREPARATION:
Heat the oven to 200 degrees.
In a bowl, place the egg yolks and sugar. Beat well with a wire stick.
Add the wheat flour and mix.
In a pan, heat the milk without letting it boil.
Pour the milk little by little over the egg yolk cream, stirring constantly.
Once it's homogeneous, add everything to the pan and heat over medium heat, stirring constantly.
After boiling, cook for 3-5 minutes.
Add the vanilla flavoring and mix everything together.
Place the cream in a bowl and let it cool covered with cling film.
Divide the puff pastry into 3 equal parts.
Place on a tray lined with parchment paper and cover with more parchment paper.
On top, place another tray to weigh it down.
Bake in the preheated oven at 200°C for around 30 minutes. Turn off the oven and leave the plate inside for another 10 minutes with the door open to dry the puff pastry well.
Remove from the oven and let cool completely.
Fill a strip with half the pastry cream, using a spatula or pastry bag with a smooth nozzle.
Overlay another strip of puff pastry and repeat the process, ending with the last strip on top.
Cut into 5 cm wide slices, using a serrated knife.
Sprinkle with powdered sugar when serving.
