INGREDIENTS:

  • 600g pork liver fillets
  • 4 cloves of garlic, chopped
  • 1 tablespoon of vinegar
  • Salt to taste
  • Pepper to taste
  • 2 onions

PREPARATION:

Place the liver fillets in a bowl, add the chopped garlic cloves, drizzle with vinegar and season with pepper and salt. Mix everything very well. Cover with cling film and place in the fridge to marinate for around 2 hours.

Heat the oil in a frying pan and add the liver and marinade and fry. Leave to color on both sides or until golden on the outside and juicy on the inside.

Add the onions cut into half moons and cook until they caramelize.

Place on a serving plate, garnish with olives and parsley. Serve with boiled potatoes.
