INGREDIENTS:

  • 500 g of red beans
  • 400 g spare ribs
  • 500 g of pork
  • 1 beef chorizo
  • 1 small cabbage
  • 1 carrot
  • 1 large onion
  • 3 cloves of garlic
  • 4 tomatoes
  • 0.5 dl of tomato pulp
  • 1 dl of olive oil
  • 1 bay leaf
  • Salt and pepper to taste

PREPARATION:

The day before, soak the beans.

Place the ribs, bacon and pork in a container, season with salt and place in the fridge.

On the day, cook the beans in water seasoned with salt. When the beans are cooked, remove them from the heat and set aside.

Cook the previously washed meat and sausages in a pan with water seasoned with salt.

When the meat is cooked, remove it from the water and cut it into small pieces. Reserve the cooking broth.

Separate the cabbage leaves and wash them under running water. Peel the carrots and cut them into thin slices. Cook the cabbage and carrots lightly in salted water. Remove them to cold water and set aside.

Wash and blanch the tomatoes, peel them and cut them into cubes.

In a pan, sauté a bay leaf, chopped garlic cloves and onion in olive oil. Let it brown. Add the tomato and tomato pulp. Let it be found out.

Add the meat, beans and a little of the cooking broth. Let it cook for 10 minutes.

Then add the cabbage, cooked carrots and chorizo, let it cook, adjust the seasoning, remove from the heat and serve with white rice.
