INGREDIENTS:
- 1 mug of rice
- 2 mugs of water
- 3 tomatoes
- 1/2 red pepper
- 1/2 onion
- 2 cloves of garlic
- 50 ml of olive oil
- Salt and parsley (to taste)
PREPARATION:
Chop the onion and garlic cloves. Cut the red pepper into small cubes. Remove the skin and seeds from the tomatoes and cut them into cubes.
In a pan, heat the olive oil and sauté the onion, garlic cloves and bay leaves until translucent. Add the pepper and let it cook for 1 to 2 minutes. Add the tomato and let it cook until it starts to break down.
Add the rice and mix everything into the stew. Add the water, season with salt and pepper, and cook over medium low heat until the rice is cooked and creamy.
Sprinkle with coriander or chopped parsley before serving.
